I found a recipe yesterday that was too good to not post. I had some bananas that were getting to the point that I didn't want to eat them anymore (I am super picky about my bananas, haha). So I went online to find a yummy banana muffin recipe and found this.
Allie from Eat at Allie's adapted a recipe from Allrecipes.com that looked delicious. And it was definitely worth it!
BANANA CRUMB MUFFINS
Muffins:
1 1/2 Cup flour
1 Teaspoon baking soda
1 Teaspoon baking powder
1/2 Teaspoon salt
3 Bananas, mashed
3/4 Cup white sugar
1 Egg, lightly beaten
1/3 Cup butter, melted
Crumb Topping:
1/3 Cup packed brown sugar
2 Tablespoons flour
1/8 Teaspoon cinnamon
1 Tablespoon butter
Preheat the oven to 375 degrees.
You will need two bowls to start. In the first, combine flour, baking soda, baking powder and salt. In the other, combine the bananas, sugar, egg and butter. Once the banana mixture is thoroughly combined, add the flour mixture and mix until just combined.
Fill 12 cupcake liners 3/4 of the way full. For the topping, mix brown sugar, flour and cinnamon. Cut in butter and mix until "crumbly".
Top each muffin and bake for 18-20 minutes.

ReplyDeleteoh yum, those do look good...i'm going to pin it...i too am picky about my bananas. i don't like any spots on them and usually just make a loaf of banana bread from the ickys!
